MELOMAKARONA
– 2 cups Paradosie Extra Virgin Olive Oil
– 1 cup of brown sugar
– 1 cup of fresh squeezed orange juice
– Orange zest (from scraping an orange)
– 2 cups of grated walnut
– ½ cup Cognac
– 3 teaspoons of baking powder
– 1 teaspoon of baking soda
– ½ teaspoon cinnamon
– All purpose flour
SYRUP
– 3 cups of brown sugar
– 3 cups of water
– 1 teaspoon fresh squeezed lemon juice
– 1 cup honey
Implementation:
MELOMAKARONA
Place our Paradosie Extra Virgin Olive Oil with the brown sugar in a bowl. Then mix them for about 10’. Take the orange juice, add the baking soda and pour it together into the bowl. Add the grated walnut, the orange zest, the cinnamon and mix again.
Put the baking powder with a little flour and pour it into the bowl. Gradually add flour until the mixture forms a soft dough.
Then, make the dough into small elongated ball-shaped pieces, place them on the baking dish and bake them at a moderate temperature (200 ° C).
SYRUP
Put the brown sugar, water, honey and lemon juice all together in a saucepan and boil for about 5′-6′, to make a syrup.
Finally, take the baked Melomakarona and give each one of them a quick dive into the syrup that we have just prepared and place them carefully on a large platter.
